“Salted Cheese Latte,” the menu read. What? Was this insanity or genious? I was game to find out, since I love all of these things individually.

The answer was “genius.” The salted cheese, as it turned out, was salted cream cheese and paired beautifully with the latte. It was like drinking a heavenly latte cheesecake.

On the other hand, I shudder to think how much sugar, corn syrup, chemical-laden creamer and who knows what else was in that thing. Here’s my paleo version!

Salted Cream Cheese Iced Coffee or Chocolate

1 cup cold coffee or chocolate
coconut cream or coconut milk
sweetener to taste
ice cubes if desired

1 tablespoon paleo cream cheese
1/2 tablespoon coconut cream
1 teaspoon coconut butter
1/4 teaspoon honey
1/12 teaspoon rock or sea salt, more or less to taste

1. Prepare a cup of cold coffee or chocolate.
2. Add coconut cream/milk and sweetener to taste.
3. Add ice if using.
4. Blend the cream cheese, coconut cream, coconut butter, honey, and salt until smooth. If you’re like me and you hate cleaning the blender, you can put all of the ingredients in a small bowl and put the small bowl in a larger bowl of hot water to soften the cream cheese and coconut butter.
5. Ladle the cream cheese mixture in a swirl into the coffee or chocolate.

Notes:
** The ratio of coffee/chocolate, water, coconut cream and sweetener are to your taste: Make a cup of iced coffee or chocolate as you normally would.
