Cauliflower Oatmeal/Porridge

1.5 cups (200 grams) cauliflower florets
1/3 cup hemp seeds
1 cup water
1/4 cup applesauce
1 tablespoon cinnamon or apple pie spice
1/2 teaspoon nutmeg
pinch of salt
3-4 tablespoons coconut butter

Optional:
1/4 cup dried fruit (I used 2 tablespoons raisins and 2 tablespoons goji berries)
1/4 cup nuts (I used blanched apricot kernel slivers and pistachios)
1 sliced banana
sweetener if needed

1. Rice the cauliflower either with a food processor or grater. Transfer to pan.
2. Blend or puree the hemp seeds and water to make hemp milk, and add it to the pan.
3. Add the applesauce, cinnamon/apple pie spice, nutmeg, salt and dried fruit to the pan. Bring to a boil and then reduce heat to low. Simmer until all of the liquid is absorbed (or partially absorbed, if you prefer a wetter oatmeal).
4. Stir in the coconut butter. Taste and adjust. Top with nuts and sliced banana.

Notes
** No hemp seeds? Substitute 2/3 to 1 cup full fat, canned coconut milk (depending on how liquidy it is), or 1 cup nut milk of choice.
** A sliced banana may not sound like a big deal, but it adds so much! Highly recommended!
