Ideas: Stuffed Eggplant Tower

1. Drizzle eggplant slices with olive oil and roast for 8-10 minutes at 400 degrees, turning halfway through once the top is brown.
2. Layer sun-dried tomato and chili pesto and paleo cottage cheese between the slices.
3. Drizzle olive oil over the top and serve hot.
